Snow Skin Mooncake

It's the Mid Autumn Festival today! Time for lanterns, candles, sparkles, mooncakes and the big, round and bright moon.


Following our traditional baked mooncakes, little sister and I went on to make snow skin mooncakes during the weekends. We decided to make two flavors and we had 51 mooncakes in total at the end of the day. Both of us were spent at the end with serious back ache. Haha..


With the remaining of our colored dough, we combined them and made ONE colorful Doraemon snow skin white lotus mooncake. The effect looks good. I was saying to my sister that we should just make colorful ones next year.


Based on the feedback, I think we were quite successful. Her colleagues love it, and even my father and brother who are usually wet blankets in our baking or creations, said that it's nice. Yippie!

Ingredients
  • For the Snow Skin
    • 150g roasted glutinous rice flour (Gao Fen)
    • 150g icing sugar
    • 50g shortening
    • Approx 180g cold water
    • Food coloring
  • For the Moon Cake Filling
    • 910g White Lotus paste (bought the readymade from Phoon Huat)
Method
  1. Sift the cooked glutinous rice flour and icing sugar in a mixing bowl.
  2. Add in shortening to the flour mixture, combine the mixture, add in cold water and knead into dough form. 
  3. Add drops of food coloring and knead the dough with your hands so that it comes together to become soft dough.
  4. Divide dough, flatten the ball of snow skin and roll out until you get a thin circle. 
  5. Place the ball of filling in the center of the dough and seal the filling with the snowskin dough by wrapping around the fillings with your hands.
  6. Dust the snow skin ball with cooked glutinous flour
  7. Place snow skin ball into mooncake mould and press down on the lever hard so that the moon cake shape is formed and the face plate makes imprint.
  8. Press to release and moon cake. Repeat with the remaining dough.
  9. Chill before serving.
The mini mooncake are done using the ratio of 20g dough to filling 35g.

Kaohsiung : Fo Guang Shan 佛光山

After a much complicated directions online on how to get to the Fo Guang Shan 佛光山, we decided to take the KRT to Zuoying Station and then take the bus, 哈佛快線. Exit the Zuoying KRT Station and wait at Bus Platform 2 for the 哈佛快線 to come. There is a time schedule for the bus to arrive. Each bus trip cost NTD70 per person. You can use the iPass to tap in and out for the journey.

Alternatively, based on online reviews, you can take bus 8010/8011 at 高雄客运. It is just opposite our hotel and behind 国光客运. However, it is not recommended by the staff there as it is a much longer time and distance, that's why she recommended us to take the 哈佛快線 at Zuoying.

We have reached Fo Guang Shan 佛光山. A little overwhelmed by the map. It's a huge place. And since it's on a hill, there are alot of slopes and stairs. Just thinking about it make my knees go weak.…

Kaohsiung : Food and more food

Besides eating at Night Markets, we also went to some recommended places online and on TV. These places are not that near from the KRT and need some working out on feet.

We had accidentally went past this cafe in Zuoying Shin Kong Mitsukoshi 星光三越. The hubby saw a TV show recommending this special biscuit ball where you need to hammer it to eat in smaller pieces. We tried it as it was quite fun. We had the chocolate flavoured one.



The huge wooden hammer in shop to break the biscuit ball into pieces.


I think we hammered too much... Haha the ball became overly small pieces. It's delicious.


You can buy as gifts. If I remember correctly, three balls into one container.


I am pretty regretful that I did not buy more to bring home. I like the taste of it a lot. And I am missing it so much. Ahh.. Delicious.

Kaohsiung : Cijin Island 旗津島

After visiting The Pier-2 Art Center 駁二藝術特區 and the Takao Railway Museum 打狗鐵道故事館 in the morning, our following itinerary was to head to the Cijin Island 旗津島. By the way, if we were able to travel around on bicycles, it would be much easier. So, do rent a bicycle to travel around if you are able to cycle. Especially for The Pier-2 Art Center 駁二藝術特區 and on Cijin Island 旗津島.

About 10-15 minutes walk from the Orange line KRT station, Sizihwan Station 西子灣站 (O1), you will be able to reach the ferry terminal. Follow the signs (鼓山渡轮站) on the lamp posts to get to the ferry terminal.


 The ferry also ferries passengers travelling with bicycles and motorcycles. For us, without any cycles, it costs NTD15 per person per trip. You can pay in cash or iPass.


The ferry ride is only about 5 to 10 minutes. Cijin Island 旗津島 is just opposite, separated by the waters. The ferry terminal looks nicer on the island.
